As I’m celebrating with you on July 4th here’s a sparkler.
In one of Bethany’s Q & A interviews I read that apple pie is a major holiday dessert on July 4th. We Brits love apple pie too! My Mum used to make a wicked one!
Here in France I make an upside-down apple cake dessert which is my answer to the French Tarte Tatin. Served with a good dollop of cream or ice cream it’s delicious!

Just in case you fancy trying some apple cake the recipe is below.
Jennie’s Upside Down Apple Cake:
(No picture I’m afraid ‘cause the last one I made got eaten before I remembered I needed a photo!)
Ingredients and method:
About 5 large apples - peeled, cored and sliced thinly.
4oz butter
3oz dark brown sugar
cinnamon
Place the butter and sugar in an 9” cake tin and melt. Toss the apple slices in and coat well. While you make the cake mixture place the tin on the bottom shelf of the oven to start the apples cooking.
For the cake mix:
6oz Self Raising flour
6oz white sugar
6oz butter
4 eggs - beaten
Beat the butter and sugar together until creamy. Slowly add the beaten eggs and flour. Mix well.
Take the apples out of the oven, sprinkle the cinnamon over and spoon the cake mix over.
Takes about 40 minutes to cook in the middle of the oven. 350F or 180C
